Eggless Wholewheat Christmas Cookies

Eggless wholewheat Jaggery Christmas Fruit & Nut Cookies

Ingredients

1/2 cup (100g) - Unsalted Butter/Ghee

1/2 cup (80g) - Powdered Jaggery

2 tbsp (30ml) - Milk

1/4 tsp - Pink Salt or 1/8 tsp - Salt

1/2 tsp - Cinnamon

1 tsp (5ml) - Vanilla Extract

Zest of 1 Orange

1.5 cups (200g) - Wholewheat Flour

50g - 80g - Chopped Nuts & Dry Fruits

Instructions

  1. In a mixing bowl, whisk soft unsalted butter and powdered jaggery until it is evenly mixed.

  2. Add vanilla, cinnamon, clove, orange zest, salt and milk. Mix well until everything is well combined.

  3. Add wholewheat flour and the finely chopped fruits and nuts. Mix gently until a firm dough forms.

  4. Wrap the dough in cling film and refrigerate for around 1 hour or overnight.

  5. Roll the chilled dough between two sheets of parchment paper into an even layer, around 4-5mm in thickness.

  6. Cut out cookie circles and place them on a parchment or silicon mat-lined baking tray.

  7. Bake at 180°C for 15 minutes, or until lightly golden at the edges and the top is firm to touch.

  8. Let them cool completely on a wire rock before storing in an airtight container for upto a month.

Notes

  1. You can use zest of 1 or half an orange depending on your preference.
  2. You can use soft ghee in this recipe too.
  3. You can use salted butter in this recipe but skip adding any more salt in the recipe. The only issue with using salted butter in any of my recipes is that you will not be able to control the amount of salt in the recipe.
