Ingredients

1 cup (110 g) - Bajra/Pearl millet flour

1 cup (100 g) - Mixed seeds

1/3 cup (30 g) - Besan

1/3 cup (65 g) - Ghee

3/4 cup (100 g) - Jaggery

1/4 cup - Gond

1/4 cup (25-30 g) - Chopped nuts

3-4 Cardamom pods

Instructions

  1. In a heavy bottom pan take the bajra/pearl millet flour and place it on medium heat. Dry roast it stirring continuously until the flour turns nutty in aroma and a nice golden brown in colour. Take it out in a bowl to cool.
  2. Take all the mixed seeds in the pan and roast them on medium heat until you can hear them popping. It will take just around 5-7 mins. Take it out to cool too.
  3. Now take the besan/gram flour and dry roast it stirring continuously until it turns golden brown and beautifully nutty. Take it out to cool.
  4. Add 1/4 cup of ghee to the pan and let is heat slightly. Add the gond and roast it until all the gond is evenly puffed up all the way through. Take it all out to cool.
  5. Add the remaining ghee and 1/4 cup of chopped nuts. You can also add a few black peppercorns here if you want. Roast it until it turns lightly golden. Switch off the heat.
  6. To the roasted bajra flour and seeds, add cardamom pod seeds and grind it into a fine powder.
  7. Add the roasted besan, jaggery and the fried Gond. Reserve 2 tablespoons of gond to add later. Grind it all until evenly mixed in.
  8. Now add the toasted nuts with any ghee in the pan and the remaining fried Gond. Mix it all in.
  9. To make the laddus, take about 1-2 tbsp portions of the mixture and pressing firmly with the palms, form it into a round shape. Form all the laddus similarly.
  10. Once completely cooled, store the laddus in an airtight container for upto a month! (if they last that long :-D)

Notes

  1. I have taken equal parts of pumpkin seeds, sunflower seeds and flaxseeds for these laddus. But you can use any combination of seeds and/or nuts, in any proportion, keeping the total quantity same, i.e. a total of 1 cup.
  2. You can skip the Besan and take 1/3 cup extra Bajra is you prefer.
