Ragi Date Chocolate Cake

Eggless Gluten Free Ragi Date & Almond Chocolate Cake

Ingredients

For Cake -

  • 1 cup (120 g) - Ragi Flour/Sprouted Ragi Flour
  • 1/3 cup (30 g) - Cocoa Powder
  • 1/3 cup (55 g) - Almonds/Almond flour
  • 1 tsp - Baking Powder
  • 1 tsp - Baking Soda
  • 150-180g - Deseeded Dates
  • 1 tsp (5 ml) - Vanilla Extract
  • 1/3 cup - Ghee
  • 1 cup (250 ml) - Milk

For Frosting -

  • 3/4 cup (130 g) - Ricotta/Soft Paneer
  • 40g - Dates
  • 1 tbsp (6-7 g)- Cocoa Powder
  • 2 tbsp (30 ml) - Water
  • Pinch of Salt
  • 1/2 tsp (2.5 ml) - Vanilla Extract
  • 1 tbsp - Toasted Almond slices

Instructions

For Cake -

  1. Take ragi flour or sprouted ragi flour, cocoa powder, almonds, salt, baking soda, baking soda, chopped deseeded dates and grind it all into a fine powder.
  2. Take it out into a large bowl, make a well in the middle and add the ghee or soft butter, vanilla extract and milk gradually. Mix it gently and thoroughly until a smooth batter forms.
  3. I am baking this cake in a square 8x8 pan but you can bake it in a round 8 inch or 9 inch  pan. Transfer the batter into the greased and parchment lined baking pan and bake the cake in a preheated oven at 180C for 30-40 minutes until the cake is risen and a skewer inserted in the middle comes out to clean.
  4. Let the cake cool completely before taking it out of the pan. 

For Frosting - 

  • Take chopped pitted dates in a bowl, add cocoa powder and add boiling hot water. Give it a mix, cover the bowl and set it aside for 15-30 mins.
  • Now take soft paneer or homemade ricotta. Add the soaking date and cocoa mixture, a pinch of salt and vanilla extract. Grind it all into a smooth paste. Take it out and refrigerate it for around an hour.
  • To make it more decadent, you can add some melted dark chocolate too.
  • Once the cake is completely cooled, add the chilled frosting on top and spread it out evenly. Add a few chopped toasted almonds on top and our delicious and decadent chocolate cake is ready! 

Notes

  1. Different flours absorb different amount of moisture. You may need a few table spoons less or more liquid based on the flour you use.
  2. Based on your preference for sweetness, you can use anywhere between 150g to 180g of deseeded dates.
  3. You can use the same amount of date sugar too (ground dates).
  4. For the frosting, if you do not want to grind dates, you can use 2 tbsp date syrup. Soak the cocoa powder in hot water to bloom it and grind all the ingredients to form a smooth paste.
