Ingredients

1 cup (130 g) - Wholewheat Flour

1/2 tsp - Salt

1/4 tsp - Crushed pepper

1 tsp - Dried Herb (Basil/Oregano/Rosemary/Kasuri Methi)

1/4 cup (50g) - Cold Unsalted Butter

100g - Cheddar Cheese

1/4 cup (60 ml) - Ice Cold Water

Instructions

 

  1. In a large bowl, take the wholewheat flour, salt, crushed black pepper and any herb of your choice. Give it a quick mix.
  2. Add the cold butter that is chopped into small cubes. With fingertips, rub the butter in with the flour. Do not mix the butter all the way through. Just press it down so it breaks into smaller pieces.
  3. Once the butter is evenly mixed in, add in finely grated cheese. I like using aged cheddar in this recipe. With light fingers, mix it in evenly.
  4. If the weather is warm and you feel the butter has started to melt, cover the bowl and keep it on the fridge for around 1 hr. This will firm up the butter and cheese.
  5. Now add the ice cold water and mix it firmly to bring the flour into one mass and form a dough. If the dough is very crumbly still, add some more cold water 1 tbsp at a time until the dough starts to come together. Do not knead the flour or the Crackers will be tough.
  6. Place the dough on a cling film or plastic wrap and form it into a rough rectangle. Place it in the fridge for 1-2 hrs or upto overnight.
  7. Take the dough out and place it between two sheets of parchment paper. If the dough is very firm, let it sit for 5 mins.
  8. Roll it into a thin sheet, around 1-2 mm in thickness.
  9. Cut it into thin rectangles like I have or cut them into squares or circles. You can re-roll the edges again.
  10. Place them in a parchment lined baking sheet and bake them in a preheated oven at 180 C for around 15-18 minutes until they have turned a beautiful golden in colour.
  11. The Crackers should be crisp when you pick one to check.
  12. Let them cool completely on a wire rack.
  13. Store them in an airtight container once completely cooled for upto 2 weeks.

Notes

  1. Start with 2 tbsp of cold water to form the dough. Add 1 tbsp more at a time until the dough starts o come together.
  2. You can do the entire process in a food processor too. Add the flour with all the seasoning, mix it once, add the cold butter, process it until butter breaks into smaller pieces, add the grated cheese, mix and add water gradually.
  3. Do not knead the dough. Just press it together until it just starts to come together.
