Mango Millet Smoothie

I often look for simple, easy to make recipes that are wholesome, nutritious and taste great too. This smoothie is just that! Packed with nutrition rich ingredients, very creamy, delicious and of course not that difficult to make. Perfect to make when you need a light, refreshing and flavourful snack or breakfast that will keep you full for longer.

Millets are powerhouse of nutrients. But including them in our diet regularly can be slightly tricky for many of us, including me. This is one simple recipe that includes all the nourishment of millets in a fun and delicious way, one that even those who are new to millets can easily enjoy. This can also become a great way to include millets in your kids diet regularly.

Ingredients

Millets form the base of this smoothie. I made it with Foxtail millet but you can use any other millet that you feel taste neutral/mild. In my opinion, minor millets like Little millet, Kodo millet, Barnyard millet, Proso millet etc will work better in this recipe. These varieties are smaller in size and faster to cook. They also are milder in taste as compared to major millets like Bajra/Pearl millet, Ragi/Finger millet and Jowar/Sorghum.

Mangoes obviously bring all the flavour and make this smoothie refreshing and delicious. But you can make this smoothie with other creamy fruits too, when you don’t have mangoes handy or when mangoes are not in season. Fruits like Banana, Avocado, Chikoo, Papaya, Jackfruit etc will work really well here too.

Cashews bring in creaminess and and a beautiful flavour. It helps in making this smoothie taste really delicious instead of tasting like just a health drink.

Honey works really well in this recipe but you can switch it with any other sweetener of your choice like raw sugar, jaggery, maple syrup etc. This is the only non vegan ingredient in this smoothie, So switching it would also make this smoothie completely plant based!

Salt makes the smoothie taste richer, more luscious. Just a little bit of salt to enhance the sweetness and the flavour.

Ingredients

1/4 cup - Foxtail Millet

1 cup - Water (to cook the millet)

1 Mango

1/4 cup - Soaked Cashews

3 tbsp - Honey

1/8 tsp - Salt

1 cup - Cold Water (to make the smoothie)

Instructions

  1. First wash the millet 2-3 times until the water runs clean.
  2. Soak the millet in water for around 1 hour.
  3. Drain the water and add the soaked millets in a pan along with 1 cup of water.
  4. Place the pan on medium heat until the water comes to a boil.
  5. Turn the heat to low, cover the pan and let the millet cook until it absorbs all the water.
  6. Check a few grains of millet to make sure they are cooked. If you feel they are still slightly hard, add 1/4 cup more water, cover the pan and cook it until the water is absorbed.
  7. Turn off the heat and let the millet cool completely to room temperature.
  8. You can make it ahead of time and store it in a clean container in the fridge for upto 2 days.
  9. Soak cashews in some water for around 1 hour. Drain all the water.
  10. To make the milkshake, peel and cut 1 mango into small pieces.
  11. Add the mangoes to a blender jar, along with all of the cooked millets, soaked cashews, honey, salt and cold water.
  12. Blend it for a few minutes until everything is evenly processed and the mixture turns very creamy.
  13. Pour it into two glasses and top the smoothie with some pieces of mangoes and chopped nuts (optional) and enjoy!

Notes

  1. You can use any mild flavoured millet of your choice instead of Foxtail millet, like Little millet, Kodo millet, Barnyard millet, Proso millet.
  2. The amount of water needed for cooking different millets can be slightly different. 
  3. If you use any other method to cook your millets, feel free to cook the millet like that.
  4. You can also cook the millets in a pressure cooker to get it done quicker.
  5. If you are new to having millets, you can reduce the quantity of millets to half.
  6. You can switch honey with any other sweetener of your choice like raw sugar, maple syrup or jaggery.
  7. If your mangoes are not very sweet, you may need to adjust the sweetness accordingly.
  8. Depending on the colour of your mangoes, the smoothie may look slightly paler. 
  9. When mangoes are not in season, use any fruits that you enjoy in a smoothie.
