This easy loaf cake might look simple but is loaded with some amazing summer flavours. Raw Mangoes, Coconut and Basil! All these flavours together in a cake may sound a little weird but they actually work very well. All these flavours used subtly to create a delicious and aromatic melody of flavours that tastes so refreshing! Main Ingredients
Whole wheat flour, our very own regular aata (a fine milled whole wheat flour) forms the base of this loaf cake. Aata works beautifully in this recipe and adds more nutrients and fibre compared to all purpose flour.
Jaggery is the main sweetener in this cake. The natural notes of caramel in jaggery brings a beautiful depth of flavour to this cake. If however, you want the cake to appear greener instead of brown, you can switch jaggery with raw sugar or regular sugar too.
Flavours
Raw mango cake has to have raw mangoes, isn’t it! Grated raw mangoes go in the batter and they provide a lovely flavour as well as some tartness to work with the baking soda and make the cake fluffier and softer. The cake doesn’t taste sour. Increasing the amount of raw mangoes in the batter may not be a good idea because the amount of acid in the batter affects the texture of any cake.
This vegan cake is made using coconut milk and coconut oil. These two elements bring a beautiful coconut flavour. The coconut milk together with the grated raw mangoes work as a replacement to buttermilk in this recipe.
Fresh Italian Basils bring in a very beautiful aroma and make the cake taste incredibly refreshing! If you can’t get your hands on fresh basil, you can use few mint leaves instead or just a few drops of peppermint extract.
