I can never resist a good chocolate chip cookie. I have had many and I like to make them many different ways. But this recipe is one of my favourites! This eggless chocolate chip cookie recipe made with Oats is not only gluten free, but it makes some really crispy, decadent and very flavourful cookies. The aromas of cinnamon and vanilla and the combination of walnuts and chocolate chips is what makes these cookies really stand out. Well, I have never been able to stop at just one.

These cookies are easy to make. The dough can be made in advance and can be frozen and stored in the freezer too. And you can have freshly baked cookies in just minutes!

Here are the main ingredients:

Oats or Oat flour forms the base of these cookies. For this recipe, you can choose to grind rolled oats into a fine powder at home or use Oat flour instead. Both will work well here.

Jaggery is the main sweetener in these cookies. It adds a beautiful caramel notes to the flavour.

Ghee/Butter both will work perfectly in this recipe. You can also use brown butter too, to make the flavour nuttier. If you plan on using butter, you may need 1 tbsp less liquid in the dough as butter has more moisture compared to ghee or brown butter.

Flaxseeds and Corn flour provide binding and help with the structure of these cookies. These ingredients are important to ensure that the cookies do not turn crumbly.

Vanilla and Cinnamon work really well with chocolate. In this recipe, they bring a beautiful aroma in contrast to the nuttiness from Oats and Walnuts. You can grind some cinnamon sticks to powder at home and it comes handy for baking.

Walnuts work beautifully in chocolate chip cookies. They bring richness and nuttiness to the flavour along with providing some crunch.

Good quality Chocolate chips or Chocolate chunks will make all the difference in this recipe. You can use a mix of different kinds of chocolate too, some dark chocolate, some milk chocolate, some chocolate chips, some chopped chocolate chunks, the percentage of cocoa depending on how sweet or bitter you prefer it in your cookies. You can customise the combination as per your preference.

Ingredients

200g - Rolled Oats/Oat flour

100g - Jaggery

100g - Ghee/Butter

1 tbsp - Corn Flour

1 tbsp - Ground Flaxseed

1/4 cup - Water

1/4 tsp - Cinnamon

1 tsp - Vanilla

3/4 tsp - Baking Powder

1/2 tsp - Baking Soda

1/4 tsp - Salt

30g - Chopped Walnuts

100g - Dark Chocolate Chips

Instructions

  1. If you are using Rolled Oats, grind it into a fine powder in a blender. Take the oat flour out in a bowl and add salt, baking powder, baking soda and corn flour. Give everything a thorough mix.
  2. Take the ground flaxseeds in a bowl and add water. Mix it well and set it aside.
  3. In a large mixing bowl, take the ghee/butter and add jaggery. Whisk it until it turns pale and fluffy.
  4. Add the vanilla and cinnamon. Give it another whisk.
  5. Place a sieve over the mixing bowl and sift in all the dry ingredients we combined in step 1.
  6. Add the prepared flax egg (flaxseeds and water mixture) from step 2. The flax egg should have turned thick and sticky by now.
  7. Using a spatula mix everything gently until the dough starts to come together.
  8. Add the chopped walnuts and chocolate chips/chocolate chunks.
  9. Give it a final mix until everything is evenly mixed in. Cover and place the dough in the fridge for around 30 mins to 1 hr.
  10. Take the dough out and scoop out 2 tbsp portions of the dough. Place them on a parchment lined baking sheet. 
  11. Flatten the scooped dough slightly. These cookies will spread slightly, so leave some gap between them. 
  12. Bake the cookies in a preheated oven at 170C for around 20-25 minutes depending on your oven. The cookies should be a nice golden brown.
  13. Take the cookies out and let them cool completely on a wire rack.
  14. Store the cookies in an airtight container for upto 2 weeks (if they last that long!)

Notes

  1. If you are making your oat flour at home, grind it as finely as you can. It doesn't need to be superfine like store bought oat flour for this recipe. Both the textures will work here.
  2. If you are using butter instead of ghee or brown butter, you may need 1 tbsp less liquid in the dough. Add only 3 tbsp of water to the flaxseeds instead of 1/4 cup.
  3. Do not skip cinnamon in this recipe. It makes a huge difference to the taste and flavour.
  4. Walnuts can taste slightly bitter and oily at times. Make sure you like the flavour of the walnuts you are using in this recipe. 
  5. Use chocolate chips or chop up some chocolate bars at home. Use dark chocolate or mild milk chocolate based on your preference.
  6. Use a combination of different percentage of cocoa to have more fun. Use some dark chocolate, some milk chocolate, some white chocolate even.
