Easy Eggless Double Chocolate Cookies

If you feel that chocolate cookies are the best kind of cookies, you are going to love this recipe! Thick, chocolatey cookies with an intense chocolatey flavour, crispy edges and a molten pool of chocolate in the middle. Sounds just right, doesn’t it?!

These double chocolate cookies are not only eggless but are also made with wholesome ingredients. Cookies that use two types of chocolate: cocoa powder and dark chocolate of course. Cookies that are made with wholewheat flour and sweetened with jaggery. And they are actually really easy to make!

Main Ingredients:

Whole Wheat Flour forms the base for this cookies. Fine milled wholewheat flour, that is our regular Gehu aata, works really well in this recipe.

Jaggery is the main sweetener in this recipe. I prefer the caramel flavour notes of jaggery as it enhances the flavour of the cookies.

Butter makes the cookies moreish. Butter is needed in a cookies recipe to create that light and crumbly texture but is also adds a lot of flavour.

Cocoa Powder is one of the main chocolate elements in this recipe. Using a good quality cocoa powder will make all the difference. I would recommend using a dutch processed cocoa powder with high cocoa fat percentage (around 20-25%). This will give you a very intense chocolatey flavour and rich colour.

Milk helps bring this dough together. If you prefer crispier cookies, you can use 1 tbsp less milk in this recipe.

Dark Chocolate is what makes these cookies “Double Chocolate Cookies!” I prefer to use curvature chocolate instead of compound chocolate. You can use a mild or dark chocolate based on your personal preference of course. You can also use a mix of two types of chocolate.

Double Chocolate Cookies

Easy Eggless Double Chocolate Cookies

Ingredients

1 cup (130 g) - Wholewheat flour

1/3 cup (30 g) - Cocoa Powder

100g - Butter

2/3 cup (90 g) - Jaggery

1 tsp - Baking Powder

1/2 tsp - Baking Soda

1/4 tsp - Salt

1/4 cup - Milk

100g - Dark Chocolate chunks

Instructions

  1. In a large mixing bowl, take butter (at room temperature), jaggery and vanilla. Whisk it until the mixture turns pale and fluffy.
  2. Now place a sieve over the bowl and sift in the dry ingredients: whole wheat flour, cocoa powder, baking powder, baking soda and salt.
  3. Add the milk and mix everything thoroughly until an even and smooth dough forms.
  4. Cover the dough and chill it in the refrigerator for 30 minutes to 1 hr.
  5. Chop a 100g chocolate bar into big chunks.
  6. Take the dough out and scoop around 1.5 tbsp to 2 tbsp portions of the dough and flatten it slightly in your palm.
  7. Place a big chocolate chunk in the middle and cover it completely with cookie dough. Smooth the edges and flatten the cookies slightly. These cookies will not spread much.
  8. Form all the cookies similarly and place them on a parchment lined baking sheet. Leave some gap around each cookie.
  9. Top each cookie with some flakes sea salt or extra chocolate chips! (optional of course)
  10. Bake these cookies in a preheated oven at 180 C for around 20-25 minutes depending on your oven. The cookies should have spread a little and your house should smell very chocolatey by this time.
  11. Take the cookies out on a wire rack to cool completely.
  12. Store any leftover cookies in an airtight container at room temperature for upto a week. (if they last that long!)

Notes

  1. You can use ghee instead of butter in this recipe. If you want to use ghee, you will need 1-2 tbsp more milk to form the dough.
  2. To make the batter, you can use water or any plant based milk instead of regular milk as well.
  3. You can choose the percentage of cocoa in your chocolate as per your preference or use a combination of chocolates.
  4. To make these cookies extra chocolatey, add some chocolate chips in the cookie dough as well.

How many grams of milk?

It would be 60 mls of milk. I have not measured it in grams.
