Easy & Nutritious Ragi Hot Chocolate

I can never say no to a warm cup of hot chocolate. My favourite is one that is thick, creamy, not very sweet, slightly bitter and very very chocolatey!

I used to make my hot chocolate with milk, cream, corn flour, cocoa, jaggery and chocolate. It turns our absolutely amazing! Very creamy and very delicious! But I have always to make a healthier and more nutritious version that I and you can enjoy. And feel less guilty about finishing a big mug full!

This Hot Chocolate made with sprouted ragi flour and cashews is very thick, creamy and very chocolatey. It is thick enough that you can dip your churros and be very happy. The best part about this hot chocolate is that it can be made dairy free and vegan! A dairy free, vegan hot chocolate that is creamy, thick and luxurious and sure to satisfy your chocolate craving.

Here are the main ingredients:

Sprouted Ragi flour is very nutritious and a rich source of calcium and many other nutrients. It works really well as a thickener and brings a creamy texture when cooked well with a liquid.

Cashews bring a delicious nutty and creamy flavour. It help to balance the earthy flavours of ragi and make this hot chocolate feel induldent.

Cocoa Powder brings in the chocolatey flavour. You can use raw cacao powder or any cocoa powder that you prefer.

Dark Chocolate adds to the chocolatey flavour, brings a creamier mouthfeel and makes it taste more luxurious.

Jaggery is the main sweetener in this recipe. You can however switch it any other sweetener of your choice too.

Salt, just a pinch of it, balances the flavours and makes the hot chocolate taste richer.

You can make this hot chocolate with water, milk or any plant based milk as per your personal preference.

Ingredients

2 tbsp - Sprouted Ragi Flour

2 tbsp - Cocoa powder

50g - Dark Chocolate

4 tbsp - Jaggery

5-6 Soaked Cashews

2.5 cups - Water / Milk / Plant based milk

1/8 tsp - Salt

Instructions

  1. Add the cocoa powder, sprouted ragi flour, soaked cashews and 1 cup of water to a blender jar and blend it into a smooth paste.
  2. Take a heavy bottom pan and add place a sieve on top. Strain all the blended ragi, cocoa, cashew mixture with the help for 1 cup more water. There should be just a small amount of residue left.
  3. Place the pan on medium heat and stirring continuously bring this mixture to a boil. It will thicken as it cooks.
  4. Now turn the heat to low and add the jaggery and chopped dark chocolate. 
  5. Stir it until all the chocolate is melted and evenly mixed in. And your very creamy and delicious hot chocolate is ready!
  6. Pour it into 2 mugs and enjoy it warm!

Notes

  1. You can customise the flavours of this hot chocolate as per your preference. Use 1 tbsp of cocoa powder and 3 tbsp of sprouted ragi flour to make it more nutritious. It will still be very chocolatey.
  2. You can make this hot chocolate with water and keep it light or make it with milk to make it richer or use a combination of milk and water.
  3. You can also make this hot chocolate using any plant based milk like soya milk, oat milk or almond milk. Coconut milk will not work well here as it will bring a strong coconut flavour to the hot chocolate.
  4. Instead of using almond milk, you can also add 5-6 soaked almonds to the blender jar when following step 1 in the Instructions.
  5. You can customise the sweetness by using a sweeter chocolate or by increasing the amount of jaggery.
  6. Use any other sweetener like coconut sugar or a low calorie sweetener of your choice instead of jaggery.
