Ingredients

1/3 cup (70g) - Unsalted Butter/Ghee

1/3 cup (60g) - Powdered Jaggery

1/8 tsp - Salt or 1/4 tsp - Pink Salt

1/4 tsp - Baking Powder

1 tsp (5ml) - Vanilla Extract

1 tbsp (15ml) - Milk

1 cup (130g) - Wholewheat Flour

1/4 cup (50g) - Chocolate Chunk/Chips

Instructions

 

  • Cream the butter and jaggery: In a bowl, cream soft unsalted butter with powdered jaggery until smooth and fluffy.

  • Add the flavourings: Mix in vanilla extract, baking powder, baking soda and salt thoroughly.

  • Add the dry ingredients: Add wholewheat flour and chocolate chips/chunks.

  • Form the dough: Add milk and mix gently until you get a soft, pliable dough.

  • Shape the mini cookies: Scoop out tiny ½ teaspoon portions and place them on a parchment-lined baking sheet. If scooping feels difficult, you can roll the dough into thin logs and and cut out discs too.

  • Bake: Bake at 180°C for 10-15 minutes, or until the mini cookies are golden.

  • Cool completely: Transfer to a wire rack and let the cookies cool fully so they turn crisp.

  • Store them in an airtight container for upto 3 weeks

Notes

  • Instead of butter, you can also use ghee in this recipe. 
  • If your jaggery granules are bigger, pulse it a few times in the blender jar or in a food processor.
  • Depending on your flour, you may need any milk for the dough to come together. Add milk only if needed.
  • You can add 1/4 tsp cinnamon or zest of 1 orange too, when you want to try different flavours.
