Here are the main ingredients:

Sweet Potatoes along with oats and almonds form the body of these brownies. Even though sweet potatoes are high in carbohydrates, they are a good source of fibre and other nutrients. They have a very beautiful sweetness of their own and thus reduce the amount of additional sweetener needed in this recipe.

Oats provide some body and binding in these brownies.

Almonds bring a decadent flavour to these brownies. The natural fat in the almonds is the only fat ingredient.

Cocoa Powder provides all the chocolate flavour in this recipe. Using a good quality cocoa powder is essential here. Aim for a cocoa powder with high percentage of cocoa fat like 20-25%. Dutch processed cocoa powder will give great results. If you want, you can also use a good quality raw cacao powder here.

Jaggery is the main sweetener in this recipe. But you can easily replace jaggery with coconut sugar or regular sugar.

Milk helps bring the batter together. You can easily replace it with a plant based milk to make this recipe completely vegan.

Now that we have covered the main ingredients, here is the complete recipe!

Ingredients

1/2 Cup  (100g) - Mashed Sweet Potatoes

1/2 Cup (55g) - Oats

1/2 Cup (55g) - Almonds

1/2 Cup  (75g) - Jaggery

1/2 Cup  (50g) - Cocoa Powder

3/4 tsp - Baking Powder

1/4 tsp - Baking Soda

1/8 tsp - Salt

1 cup - Milk

2 tbsp - Chocolate chips (optional)

2 tbsp - Chopped nuts (optional)

Instructions

  1. Cut the sweet potatoes into medium pieces and steam them for around 10-15 mins until they turn soft. Or make some slits in the sweet potatoes, brush them with some oil and bake them in the oven for 25-30 mins or in an air fryer for 15-20 mins until they turn soft.
  2. Peel the skin off and mash the sweet potatoes as smoothly as you can.
  3. Take the oats and almonds in a blender jar and grind them into a fine powder.
  4. Add the mashed sweet potatoes to a large mixing bowl, followed by jaggery, cocoa powder and half of the milk. Mix it thoroughly with a whisk.
  5. Now add the remaining ingredients and mix everything evenly until a uniform batter forms.
  6. Pour the batter into a greased and lined 8x8 square baking pan.
  7. Top with some chopped nuts and chocolate chips (optional).
  8. Bake this in a preheated oven at 180C for around 25-30 minutes depending on your oven.
  9. Let the brownies cool slightly before taking them out of the pan.
  10. Slice the brownies into 9 pieces once they have cooled to room temperature.
  11. Store any leftover brownies in an airtight container in the refrigerator.

Notes

  1. Do not boil the sweet potatoes. Steam them or bake them. Boiling may dilute the flavour and introduce extra moisture.
  2. If you do not want to grind oats and almonds, you can also use the same quantity of oat flour and almond flour here.
  3. To make these brownies vegan, switch milk with any plant based milk of your choice.
  4. You can use coconut sugar instead of jaggery too or use maple syrup. If using maple syrup, you may need less quantity of milk than mentioned in the recipe. Add half the quantity of milk first and add more only if your batter needs it.
  5. Bake the brownies for slightly lesser time (5 mins) if you like your brownies really fudgy!
