Savoury Jowar Cookies

Eggless Gluten free Savoury Jowar Cookies

Ingredients

1 cup (120 g) - Jowar Flour

1/2 cup (90 g) - Crumbled Paneer

3 tbsp (40 g) - Butter/Ghee

1/2 -1 tbsp - Powdered Jaggery

1/4 - 1/2 tsp - Salt

1/4 tsp - Baking Powder

1 tbsp (6 g) - Ground Flaxseed

1 tbsp  (15 ml) - Water

Instructions

  1. In a mixing bowl, combine jowar flour, paneer, butter or ghee, jaggery, salt, and baking powder. Mix until crumbly and even.

  2. For flavour you can add crushed black pepper, ajwain/carrom seeds or jeera/cumin seeds.
  3. In a small bowl, mix flaxseed powder and water. Let it sit for 5 minutes until it forms a gel.

  4. Add the flax gel to the flour mix and knead into a dough. ing, add crushed spices like pepper, cumin, or ajwain for flavour.

  5. Shape the dough into a firm log. Wrap in plastic and refrigerate for 1 hour.

  6. Preheat oven to 180°C (350°F). Line a baking tray with parchment paper.

  7. Slice the chilled dough into 3-5 mm thick discs. Place on the tray.

  8. Dab each cookie with water and press a few thyme leaves on top (optional).

  9. Bake for 25–30 minutes until golden and firm to touch.

  10. Cool completely on a wire rack before storing in an airtight container.
