If you love the flavours of garlic bread and cheesy buns but don’t want to spend hours waiting for dough to rise, these instant chilli cheese garlic buns in an airfryer are the perfect solution. They are soft and fluffy and filled with a buttery mix of garlic, herbs, chilli flakes, and gooey cheese. The best part? This recipe is eggless, yeast-free, and made healthier with half wholewheat flour and yogurt, so you can enjoy it as a quick snack, party appetizer, or tea-time treat.

This recipe is primarily made for airfryer and you will get the best results with an airfryer. However, I have included the instructions for baking these buns in a regular oven/OTG and on stove top as well.

Let’s Look at the Main Ingredients!

Butter

Butter forms the base for frying the garlic, chilli and herbs , giving the buns a rich, indulgent taste. In small amounts, butter enhances flavour without overwhelming the recipe. Since we use a measured portion here, it adds creaminess while keeping the recipe balanced.

Flavours

Garlic is the main flavour component. When sautéed in butter, garlic releases a beautiful aroma that makes the buns irresistible.

Fresh Herbs bring freshness and balance to the cheesy, buttery filling. I used Coriander and basil together, they add a fresh, earthy kick that elevates the flavour.

Chilli flakes bring a gentle heat that pairs beautifully with cheese and garlic.

Cheese

I used Cheddar and Mozzarella. Cheddar gives a sharp, tangy flavour, while mozzarella brings the gooey melt factor we all love. You can use any cheese of your choice in this recipe. Cheese is also a source of protein and calcium, making these buns more satisfying.

Yogurt (Curd)

Instead of yeast, this recipe uses yogurt to create a soft dough. Yogurt adds moisture, mild tanginess, and natural probiotics, making the buns healthier and easier to digest.

Jaggery or Raw Sugar

A touch of jaggery or raw sugar helps balance the flavors and also activates the leavening agents in the dough. Jaggery is less processed than refined sugar and contains trace minerals, making it a better choice.

Wholewheat Flour

Wholewheat flour brings extra fiber, nutrients, and a wholesome nutty taste to the buns. It helps create a healthier balance while keeping the texture soft when mixed with all-purpose flour.

All-Purpose Flour

To keep the buns light and fluffy, we combine wholewheat flour with all-purpose flour. This prevents the buns from becoming too dense and ensures they rise well, even without yeast.

Baking Powder and Baking Soda

These two are the key leavening agents that help the buns rise instantly. They replace yeast in this recipe, making the buns fluffy without long proofing times.

Milk

Brushing the buns with milk before airfrying helps achieve a golden-brown crust.

Ingredients

For the Buns/Dough:

  • 1 cup  (130 g) - Wholewheat Flour
  • 1 cup (120 g) - All Purpose Flour
  • 1/2 tsp - Salt
  • 1 tbsp - Jaggery
  • 1 cup (220 g) - Yogurt/Dahi
  • 2 tsp - Baking Powder
  • 1/2 tsp - Baking Soda

Chilli Garlic Stuffing -

  • 2 tbsp - Chopped Garlic
  • 4 tbsp - Chopped Herbs
  • 1/2 tbsp - Chilli Flakes/Chopped green chillies
  • 2 tbsp (30 g) - Butter
  • 1/4 tsp - Salt
  • 100 g - Cheese

Instructions

  1. Heat butter in a pan on medium heat. Add chopped garlic, herbs, and chilli flakes. Sauté for 2–3 minutes until fragrant. Let it cool to room temperature and take out 1 tbsp of the butter to brush on the buns later. Then refrigerate the remaining mixture for 30 minutes.

  2. Mix the chilled garlic butter with grated or crumbled cheese to prepare the filling.

  3. In a mixing bowl, whisk yogurt, jaggery, and salt. Add wholewheat flour, all-purpose flour, baking powder, and baking soda. Mix, and knead it into a soft dough without over-kneading.

  4. Lightly flour the work surface. Roll the dough into a thick disk and divide into 10 equal parts. Flatten each piece, add around 1.5 tbsp of filling, seal it completely, and shape into a smooth ball. Stuff all the buns similarly.

  5. Preheat the airfryer to 200C. Lightly grease the airfryer net/rack.
  6. Brush the buns generously with milk and place on the greased airfryer rack. Do not overcrowd the basket. leave gap around each bun.

  7. Airfry at 200°C for 4–5 minutes until golden. Take them out in a large bowl, and cover for 5 mins.

  8. Brush the buns generously with the reserved garlic butter and enjoy!

Notes

  1. You can also bake these buns in a preheated oven at 200C with fan for 7-10 mins (depending on your oven). Place hot water in a pan one rack below the baking tray while baking.
  2. To cook them on stove top, flatten the buns slightly. Place them directly on a hot heavy bottom tawa. Cover and cook at low heat for 1-2 mins. Uncover, flip the buns, sprinkle/spray some water, cover the lid again and cook for 1-2 more mins. You can place 2-3 buns in one go, depending on the size of your tawa.
