In a bowl, combine chopped dried fruits with orange zest, spices, instant coffee, and hot water. Mix, cover, and let it rest for 30 minutes to an hour.
Add ghee or butter, orange juice, rum or brandy, and salt. Mix again.
Grind wholewheat flour, dates, baking soda, and baking powder together until fine.
Add the dry mixture to the soaked fruits. Fold gently into a thick batter.
Transfer to a lined 7–8 inch cake pan and bake at 170°C for about 60 minutes, or until a skewer comes out clean.
