Ingredients

For Chocolate Cake -

3/4 cup (100g) - Powdered Jaggery or Raw Sugar

1/3 cup (25g) - Cocoa Powder 

1/8 tsp Salt 

1 cup (130g) - Wholewheat Flour 

2 tbsp (20g) - Milk Powder 

1.5 tbsp (10g) - Corn flour 

1 tsp Baking Powder 

1/2 tsp Baking Soda 

1 cup (250ml) - Milk 

1 tsp (5tsp) - Vinegar 

1 tsp (5tsp) - Vanilla Extract 

1/3 cup (80ml) - Butter/Ghee/Oil 

 

For Thick Ganache 

150g Van Houten Professional Signature Dark Chocolate Callets 

150g Whipping Cream

 

For Thin Ganache 

100g Van Houten Professional Signature Dark Chocolate Callets

90g Hot Milk 

 

1 tbsp Chopped Nuts & Edible Rose Petals (optional) 

 

Instructions

 

For the Cake - 

  1. Mix all the dry ingredients thoroughly - Wholewheat flour, milk powder, corn flour, salt, baking powder, baking soda, jaggery. 
  2. Make a buttermilk by mixing milk, vinegar and vanilla extract and let it sit for 10 mins. 
  3. Add the prepared buttermilk and oil to the dry ingredients and whisk it gently to form a smooth batter. 
  4. Pour into a prepared 8 inch square or two 6 inch round baking pans and bake at 180C for 30-35 mins. 
  5. Let it cool and cut it into 2 discs, if you baked them in one layer. 

For Thick Ganache - 

  1. Pour hot whipping cream into chocolate callets. Let it sit for 5 mins.
  2. Mix thoroughly until all the chocolate melts and chill for 30 mins. 

For Thin Ganache - 

  1. Pour hot milk into chocolate callets. Let it sit for 5 mins. 
  2. Whisk thoroughly until it turns smooth and glossy.

Assembly - 

  1. Place a layer of cake, followed by a generous even layer of ganache. 
  2. Place the second layer of cake gently and top with more ganache. You can frost the full cake too. 
  3. Place a cake collar around the cake. 
  4. Pour cooled thin ganache generously and top with chopped nuts, rose petals.
  5. Pull the collar up and watch the magic unfold! 

Notes

  • Ensure the cake is completely cool before layering, otherwise the ganache will melt.

  • Sift dry ingredients to avoid lumps in wholewheat batter.

  • Do not overheat the cream while making ganache — it can split the chocolate.

  • Use good quality chocolate for best flavour and shine.

  • Chill the assembled cake for 20–30 minutes before serving for cleaner layers.
