There is something irresistible about warm garlic bread fresh out of the oven. This recipe makes soft and cheesy stuffed garlic bread using 100% whole wheat flour. There is no maida and no eggs. The bread turns out fluffy, flavourful, and golden, with a generous garlic butter and cheese filling inside. It is perfect for evening snacks, parties, or when you want comforting food made with better ingredients.

For the Dough

Whole wheat flour (atta) contains fibre and nutrients that refined flour does not have. It gives structure to the bread and makes this recipe more wholesome.

Warm water activates the yeast. It helps form a soft and pliable dough.

Jaggery adds mild sweetness and helps activate the yeast. It also adds a subtle depth of flavour.

Instant or Active dry yeast makes the bread rise. It creates a soft and airy texture.

Salt enhances flavour. It also balances the sweetness of jaggery.

Olive oil makes the dough soft. It improves texture and keeps the bread moist.

Ingredients

For Bread Dough -

  • 3/4 cup/180ml - Warm Water
  • 1/2 tbsp/5g - Powdered Jaggery, and
  • 1/2 tbsp/6g - Instant or Active Dry Yeast
  • 1.5 cups/200g - WholeWheat Flour,
  • 1/2 tsp 4g - Salt
  • 1 tsp - Dried herbs or seasoning of choice
  • 1/2 tbsp/6g - Olive Oil

For Stuffing -

  • 2 tbsp/20g - Unsalted Butter
  • 2-3 tbsp - Chopped Garlic
  • 1/2 tbsp - Chilli Flakes,
  • 1/4 cup - Chopped Herbs
  • 1/4 tsp - Salt or 1/2 tsp - Pink Salt
  • 50-100g - Grated Cheese
  • 2 tbsp - Sweet Corn
  • 1 tbsp - Chopped Pickled Jalapeños

Instructions

 

Step 1: Activate the Yeast

In a bowl, add warm water, jaggery, and yeast. Mix gently and let it sit until slightly frothy. If you are using Instant yeast, you can add dry ingredients immediately.

Step 2: Make the Dough

Add whole wheat flour and salt to the yeast mixture. Mix until a rough dough forms.

Step 3: Knead the Dough

Drizzle olive oil on your work surface and knead the dough for 10-15 minutes. The dough becomes smooth and soft.

If you have a stand mixer, you can do Step 1, 2 and 3 in your stand mixer.

Step 4: First Rise

Place the dough in an oiled bowl and cover it. Let it rise until doubled in size. You can also place your dough in the fridge overnight or upto 24 hrs for cold fermentation. Let the cold dough sit at room temperature for 30 mins to 1 hr, before shaping.

Step 5: Make Garlic Butter

Melt butter in a pan and add chopped garlic. Let it sizzle on low heat and then add chilli flakes, herbs, and salt. Let it cool completely.

Step 6: Shape the Dough

Punch down the risen dough and transfer it to a flour dusted parchment paper. Roll it into a large oval shape.

Step 7: Add Filling

Spread garlic butter on one half and keep the edges clean. Add grated cheese, sweet corn, and jalapeños on top.

Step 8: Fold and Seal

Brush the edges lightly with water and fold the dough over. Press the edges firmly to seal.

Step 9: Second Rest

Dust some more flour on the top, and score lines on top of the bread. Cover and let it rest for 30 minutes while the oven preheats to 200°C.

Step 10: Bake

Brush the top with butter and bake for 20 minutes until golden. Once out of the oven, cover the bread with a foil or kitchen towel for 5-10 mins. Slice, and serve warm.

Notes

  • Use warm water, not hot water. Hot water can kill the yeast.

  • Knead the dough for at least 10-15 minutes. Proper kneading makes the bread soft.

  • Let the dough rise fully until doubled. Do not rush this step.

  • Cook the garlic on low heat. Do not brown it or it will taste bitter.

  • Seal the edges properly. This prevents the cheese from leaking out.

  • Preheat the oven fully before baking. This helps the bread rise properly.
