For Bread Dough - For Stuffing - In a bowl, add warm water, jaggery, and yeast. Mix gently and let it sit until slightly frothy. If you are using Instant yeast, you can add dry ingredients immediately. Add whole wheat flour and salt to the yeast mixture. Mix until a rough dough forms. Drizzle olive oil on your work surface and knead the dough for 10-15 minutes. The dough becomes smooth and soft. If you have a stand mixer, you can do Step 1, 2 and 3 in your stand mixer. Place the dough in an oiled bowl and cover it. Let it rise until doubled in size. You can also place your dough in the fridge overnight or upto 24 hrs for cold fermentation. Let the cold dough sit at room temperature for 30 mins to 1 hr, before shaping. Melt butter in a pan and add chopped garlic. Let it sizzle on low heat and then add chilli flakes, herbs, and salt. Let it cool completely. Punch down the risen dough and transfer it to a flour dusted parchment paper. Roll it into a large oval shape. Spread garlic butter on one half and keep the edges clean. Add grated cheese, sweet corn, and jalapeños on top. Brush the edges lightly with water and fold the dough over. Press the edges firmly to seal. Dust some more flour on the top, and score lines on top of the bread. Cover and let it rest for 30 minutes while the oven preheats to 200°C. Brush the top with butter and bake for 20 minutes until golden. Once out of the oven, cover the bread with a foil or kitchen towel for 5-10 mins. Slice, and serve warm. Use warm water, not hot water. Hot water can kill the yeast. Knead the dough for at least 10-15 minutes. Proper kneading makes the bread soft. Let the dough rise fully until doubled. Do not rush this step. Cook the garlic on low heat. Do not brown it or it will taste bitter. Seal the edges properly. This prevents the cheese from leaking out. Preheat the oven fully before baking. This helps the bread rise properly.
